Ryotei-First-class Traditional Japanese restaurants
"Ryotei" (Traditional Japanese restaurants) in the Edo Period (1600-1867) began as “Caretaker Tearooms" which were used by the caretakers of each clan for officials of the shogunate or for receptions and negotiations with other clans.
Therefore, the general image of restaurants is that they are high-class and high-priced places where only government officials, high-ranking bureaucrats, and businesspeople of large companies visit.
It is true that there are still some places that will “prohibit entry without the recommendation of the members", but recently there are many more places which regular people can use freely.
The food at restaurants is called banquet food, and includes one soup and three vegetables (smoked food, raw fish, grilled food, stewed food) otoshi, fried food, steamed food, marinated food, vinegar food, etc., and at the end, rice and miso soup and aromatic items are presented.
There are many dishes filled with seasonality using seasonal ingredients, and you can feel Japanese nature. Also, not just the food but the utensils, rooms, garden and furniture are all in a style reflecting Japanese culture.
Restaurants also continue to convey the visage of Koedo in Kawagoe.
